3. Combine dry ingredients: Gently fold the sifted almond flour and powdered sugar into the colored meringue in batches. Use a spatula to fold gently until the mixture is shiny and flows like lava when lifted (the "macaronage" stage). Do not overmix.

4. Pipe the macarons: Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto your prepared sheets, about 1 inch apart. Tap the baking sheet gently on the counter to remove air bubbles.
